Rubinelli Vajol Philosopy is to offer the beauty and delicious goodness coming from the very heart of Valpolicella. The land of Vajol is located in the centre of Valpolicella. The landscape of the vineyards, defined by brick walls, decorated by olive trees, and cherry blossom and almond trees, is the essence of Valpolicella. The wines, sublime nectar produced by the grapes, contains a sweet secret stored in the heart of Valpolicella: a slow time, during which the grapes mature in the valley kissed by the sun, and protected by the rolling hills. The correct time for the grapes to rest and finally enjoy sleepy dreams inside great oak barrels, in the cool cellar built into the side of the mountain.

This wine exhibits intense notes of sour cherry, red fruits, blueberry and pleasant hints of spices and rhubarb. On the palate, it is full, rounded, strongly structured. The high alcohol grade is perfectly balanced by velvety tannins and balsamic notes ensuring excellent drinkability. Harmonic to the taste, fresh sour cherry, perfect balance between juice and sugars. Valpolicella classic stands out: pure elegance.

Select grapes are pressed after drying for few days in the drying loft. Fermentation in stainless steel at controlled temperature. In January the wine is re-fermented ( ri-passo ) for few days over the amarone’s new pomace reaching more structure, alcoholic content and harmony. Follows resting in big oak barrels. Typical of Valpolicella, the ripasso technic has no equal in the rest of Italy.
