Bought in 1998, this is a family run estate created by the incredibly talented and passionate Séverine and Philippe Bourrier, and lies just to the south of Perpignan, in the plains region of the Roussillon. It consists of three separate terroirs, all farmed organically. The name of the estate comes from the Catalan word l’Ou, meaning egg, because of the egg-shaped well on the property.

Dubbed “A Rising Star in the Roussillon” by Jeb Dunnuck, their wines are exceptional.

A fine and elegant nose of apricots gives way to fresh and slightly aniseed notes in the mouth. Minerality marks the attack, before ceding to the full elegance of white fruits in the finish.

About The Product

The Grenache Gris grapes come from the Côtes Catalans, which is the principle IGP allowing only mono varietal wines. The vines thrive at an altitude of 350 metres’ elevation in the Maury terroir, located in the northern part of the Roussillon region. The climate is Mediterranean, strongly influenced by cooling coastal breezes combined with mountain-freshness from the foothills of the Pyrenees which balance the hot, arid summers. The soils are made up of alluvial marls of the Roussillon plain, along with black schist; the latter imparts great aromatic complexity to the wines, characterised by freshness and notes of the garrigue.

The vineyard is certified organic, no herbicides or chemicals are used. Yields are kept low to ensure good concentration of the pure fruit flavours and the fruit is hand-harvested at optimal maturity.
Fermentation took place with selected yeasts at controlled temperatures in terracotta eggs, lasting seven months. The ovoid shape sets the lees into perpetual motion, naturally accentuating the varietal aromas and minerality, while requiring minimum intervention from the winemaker. The wine was clarified through cool temperatures and lightly filtered, to fully express the minerality and the nuances of the terroir.
