The name Pieve de’ Pitti comes from the Florentine Pitti who owned the estate until the end of the XVII century and from the parish chapel of St. John of Pava, that was built on the ruins of an ancient Etruscan church. The Pieve de ‘Pitti is located on the southern edge of the municipality of Terricciola, in the heart of the Terre di Pisa at 140 meters above sea level. The soils, sands, clays and limestones, are rich of shells and fossils, but the character of the wines comes mainly from the sea breeze that blows all year round from South-West, over the Miemo and Castellina hills. Such puffs, dance through our grapes with a salt embrace, so intense and surprising. The grapes that are grown here represent the terroir and winemaker’s philosophy.

Vinsanto is made by a selection of the best Trebbiano and San Colombano grapes, left drying on racks for about 4 months.

The must is pressed by hand and put into small chestnut and cherry casks with no additions whatsoever. It remains in casks for 5 years in our Vinsantaia in order to age, lulled by the sunshine and the sea breezes. The Vinsanto’s beautiful dark amber colour with some reddish reflections is in harmony with it’s caramel aroma. An intense and persistent bouquet of dried fruit, apricots, and tamarind gives way to a dry finish and an excellent balance between sweetness, freshness and an intriguing savoury note.
