Château de L’Ou Infiniment de L’Ou Blanc 2015
Bought in 1998, this is a family run estate created by the incredibly talented and passionate Séverine and Philippe Bourrier, and lies just to the south of Perpignan, in the plains region of the Roussillon. It consists of three separate terroirs, all farmed organically. The vineyard terroir for Chateau de L’Ou Blanc Cotes Du Roussillon consists of alluvial marls of the Roussillon plain. The name of the estate comes from the Catalan word l’Ou, meaning egg, because of the egg-shaped well on the property.
Dubbed “A Rising Star in the Roussillon” by Jeb Dunnuck, their wines are exceptional.
Its name translates as ‘infinite or immeasurable’ and in the hands of an excellent winemaker like Severine Bourrier, balance and prismatically clean fruit come to the fore. The Chardonnay “Infiniment” comes from the black schist soils on one of their higher-elevation sites. Aging occurs in 300-liter barrels with some lees stirring during elevage, which yields a rich and creamy rendition that still holds great minerality and flavors of baked apples, cinnamon and honeysuckle.
